All credit for this recipe belongs to my friend Victoria who whipped it up for a family do when she hadn’t got time to make anything else. Since then she has made it for me and I have made it so many times.
When you simply haven’t got time to cook, this literally take a couple of minutes and can be added to whatever else you have readily available – I often do it with fish I keep frozen for emergencies!
Ingredients: serves 2
1 large courgette, cut into ribbons length ways with a vegetable peeler
1/2 pack of feta cheese, crumbled
1/2 bag of rocket and spinach leaves
fresh mint, torn
Method
Assemble the ingredients onto a large plate of bowl.
Season and drizzle with olive oil.
