These baked apples make a perfect breakfast or even a dessert as they taste just like apple crumble!
For the heartier appetites I would suggest two halves, but for a light bite just have one.
If you can get away with less sweetness then remove the maple syrup, the apples are very sweet on their own anyway.
Ingredients: serves 2 - 4
2 bramley apples
few sprinkles cinnamon
2 tsp coconut oil
1 tbsp nut butter
2 large spoonfuls natural/ Greek yoghurt
For the topping mixture:
40g rolled oats
1 tbsp coconut flour
1 tbsp maple syrup
1/2 tsp cinnamon
2 tbsp almond butter (can use other types)
Preheat oven to 180 degrees / 160 degrees fan/ gas mark 4.
Cut the apples into two and gently remove the cores trying not to split the apples halves any further.
Combine the topping ingredients together in a bowl – rolled oats, coconut flour, maple syrup (if using), 1/2 tsp cinnamon and nut butter. Keep mixing until the nut butter breaks up and is evenly mixed.
Sprinkle the remaining cinnamon on the apple halves and then add the filling evenly between the 4 pieces of apple. Don’t worry too much if it doesn’t all fit, just let it fall off, you can scoop it up when it’s cooked.
Top each apple with 1/2 tsp coconut oil.
Place in the oven for around 25 minutes until the apple is soft.
To serve place in a bowl with the yoghurt and remaining nut butter. Healthy apple pie for breakfast!!
