I learnt this recipe on a healthy cookery course I did and despite not being a huge beetroot fan I love these!
Beetroot is packed full of vitamins, minerals and anti-oxidants whilst turmeric is a super food. Pair this with my garlicky avocado dip for a nutritious lunch or snack.
Prep time: 15 mins. Cooking time: 25 mins
Ingredients: makes 8 - 10 patties
150g raw beetroot (although you can use pre-cooked if you wish)
1 medium apple, cored
100g feta cheese
2 spring onions, very finely chopped
2 tsp ground cumin
1 heaped tsp turmeric
50-75g sesame seeds for coating
Preheat oven to 200 degrees / 180 degrees fan / gas mark 6.
Line a baking tray with baking parchment.
Whizz the oats in a food processor until finely ground then put into a large mixing bowl and put aside.
Next grate the beetroot, apple and feta in the food processor (this can be done by hand but is just quicker in the food processor).
Then mix the beetroot mixture in with the ground oats and add the cumin, turmeric and egg. Mix thoroughly – I find it easier to do this with my hands.
Form the mixture into 8-10 patties.
Lastly pour the sesame seeds into a pile or a bowl and coat each patty in them.
Put them on the baking tray and cook in the oven for 25 minutes until firm.
