Can you remember the Dukan Diet – around about a decade ago? Well this recipe originated from there and my friend Helen took it and played around with it to make some mini cakes suitable for her one year old.
I then thought I’d give making them a go with my 3 year old ‘helping’…. and I was surprised at how easy they were but also tasty as a snack.
Top tip though – use silicone cake cases or they get too stuck to the paper ones!
Check out the raisin and cinnamon version too.
Ingredients: makes 10 - 12 kids size cakes
60g oat bran
2 eggs, beaten
90g greek yoghurt
1.5 tsp baking powder
50g strong cheddar cheese, grated
1 tbsp marmite
Preheat oven to 170 fan/ 190C.
Mix together all the ingredients in a large mixing bowl until even.
Spoon into the silicone cake cases and place in the oven for around 15- 20 minutes until golden brown on the top and a skewer comes out clean.
