This dish is quick and easy but really really tasty!
It has a great mix of protein from the chicken and nuts, carbs from the noodles, healthy fats from the sesame oil and cashew nut butter and finally mushrooms, onions and spinach to ensure you are working towards your 5 a day.
Use ready made noodles to make it even quicker….
Ingredients: serves 2
2 chicken breasts
2 tbsp. tamari (or soy sauce)
2 tsp cumin
1 tsp sesame oil
1 large onion, cut into bite sized chunks
2 garlic cloves, finely sliced
75g mushrooms, cut into chunks
50g cashew nuts
2 portions of straight to wok noodles (can use ones you boil first if you prefer)
75g cashew nut butter
pinch dried chilli flakes
Cut the chicken breasts into bite sized pieces and toss in 1 tbsp. tamari/ soy sauce and 1 tsp cumin.
Heat the sesame oil in a frying pan and fry the chicken over a high heat until starting to brown on the outside (about 3 minutes).
Next add the onion and cook for a further 3 minutes. Then add the garlic, mushrooms and nuts and cook for a further 2 minutes.
Finally add in the spinach and noodles and mix everything thoroughly in the pan.
Whilst this is cooking, make up the sauce using the remaining tablespoon of tamari/ soy sauce, 1 tsp cumin and the cashew nut butter and chilli flakes. Use up to 5 tbsp. water to thin the sauce out a little.
Once all the chicken and veg are cooked through add the sauce and ensure it is evenly coating the food. Serve immediately.
