This is a really quick and easy meal option that is great packaged up and taken for a lunch. It is also just as good with goats cheese instead of the chicken for a variation.
I’ve put quantities of veg below but to be honest you can just use what you’ve got in your fridge or whatever you fancy that day -it’s a really versatile dish.
Ingredients: serves 2-3
2 chicken breasts
1 packet of ready made quinoa (you can use the dried version but it just takes longer!)
1/2 red onion, finely chopped
1/2 red pepper, chopped
8 – 10 cherry tomatoes, halved
100g frozen peas
100g frozen sweetcorn
Pop the chicken breasts under the grill for 20 minutes turning them once. You know they are cooked when there is no pink meat inside.
Meanwhile chop the onion, red pepper and tomatoes and put the sweetcorn and peas into a steamer to cook for about 3 minutes.
Lastly put the quinoa packet into the microwave as per the instructions (normally 1-2 minutes).
Finish by mixing the quinoa, chopped veg, sweetcorn and pea mixture and the chicken together in a bowl and serve. It’s that easy!
