Chorizo and Egg Hash

Despite chorizo being quite a fatty meat so not one I would recommend being eaten too often, this does make for a yummy breakfast on a Sunday and will keep you full for ages too.  Plus it does contain some veg!

Ingredients: serves 2

1 large red onion, chopped

1/2 chorizo sausage (approx. 100g), chopped into 1/2 discs

1 clove garlic, chopped

400g tin chopped tomatoes

paprika & chilli powder to taste

4 eggs

Method

Put the chopped onion and chorizo into a frying pan on medium heat.  No oil is required as the chorizo creates enough of its own.

Gently fry until the onion starting to soften – about 5 minutes.  Then add the garlic and fry for a further minute.

Next add the chopped tomatoes followed by enough paprika and chilli flakes depending on how hot you like it.

Reduce the heat and leave to cook through gently for about 10 minutes until sauce has started to thicken.

As best you can make 4 little wells in the mixture and add in the eggs.  Cover with a lid and leave to cook until the whites have set – about 5 minutes.

Serve.
