Despite it being a superfood, kale gets a bit of a bad wrap but this recipe will surprise you!

I learnt to cook kale this way on an Italian cookery course in London and since then can’t get enough of it, I could literally sit and eat a plateful of this stuff!!

Service it as a snack or as a side with your dinner and have your mind changed!

Ingredients: serves 1

curly kale

olive oil

minced or finely chopped garlic

chilli flakes (optional)

Method

Preheat oven to 210 degrees / 190 degrees fan/ gas mark 5.

Wash the kale and pat it dry with kitchen towel.  Remove all the hard stalks.

Place the kale in a single layer on a large baking tray.

Drizzle over olive oil and then using your bare hands, massage it into the kale so that it is all covered in oil.

Add garlic and chilli to taste and mix in.

Place in the oven for about 15 minutes (depending on your oven) but ensure that you mix it around half way through so that all the kale is crispy.

And that’s it!  Eat.
