Family Friendly Pancakes

These are the simplest yet healthiest pancakes you will ever come across; ideal as either a breakfast or a dessert.  Made of only 3 ingredients and your favourite toppings they have been a hit with both toddlers and adults whenever they have been served!

Ingredients: makes 3 pancakes

2 eggs

1 banana (the riper the better)

1 dessert spoon coconut flour

1 tsp coconut oil

Toppings of choice – I used natural yoghurt & blueberries

Method

This is so easy!

Put the banana into a bowl and mash with the back of a fork.

Then add the eggs and flour and whisk together with the fork until the mixture is as smooth as possible and no big lumps of banana.

Heat a 1tsp of coconut oil in a frying pan until hot then add the pancake batter in 3 spoonfuls into the pan.

Cook on a gentle heat for a couple of minutes on each side ensuring it is cooked through in the middle but not burnt.

Serve with toppings of your choice.
