You might be thinking I don’t have time to eat breakfast never mind make my own granola but this is so easy I promise!
When the oven is on for dinner you can just throw it in and seal in tupperwares for as long as you like.
It even makes a tasty afternoon snack.
Ingredients: serves 4
5og chopped brazil nuts,
50g cashew nuts
25g pumpkin seeds
25g coconut flakes
1 tbsp. chia seeds
1 tbsp. vanilla extract
2 tbsp. maple syrup (amend according to taste)
Preheat the oven to 140 degrees fan/ 160 degrees/ gas mark 3.
Put all the nuts, seeds, flakes and oats together in a bowl and mix thoroughly (if you are really short of time just mix them directly onto a baking tray!)
Add the vanilla extract and maple syrup and combine evenly.
Tip contents onto a baking tray with sides (to prevent it falling everywhere!) and pop into the oven for 20 minutes. Turn after 10 to ensure mixture is evenly cooked.
Serve with milk of choice, yoghurt, berries or whatever fruit suits you.
