This is a very quick and easy meal to make mid-week and only requires one pan to wash up!
If you require a more filling version then add some new potatoes with it.
Ingredients: serves 3
3 tbsp. butter
3 cloves minced garlic
1/2 tsp dried oregano
1/2 tsp mixed herbs
1/2 tsp onion powder
3 chicken breasts
1 pack asparagus
Heat 2 tbsp. butter in a frying pan and on a gentle heat add 2 cloves minced garlic and the dried herbs. Cook through for about a minute but do not allow to burn.
Next add the chicken to the pan and cook gently for about 7 minutes on each side.
Move the chicken over to the sides as best you can and add the remaining butter and last clove of garlic.
Lastly add the asparagus to the pan and try to keep in a single layer if possible so it cooks through evenly and quickly. Cook for about 5 minutes turning over several times.
Serve chicken and asparagus together with any remaining herbs and juices from the pan over the top.
