Roasted Chickpea Snack

As a rich source of vitamins, minerals and fibre, chickpeas may offer a variety of health benefits, such as improving digestion, aiding weight management and reducing the risk of several diseases. Additionally, chickpeas are high in protein so they make a great little snack.

Keep them in a tupperware and eat within about 2 days.

Ingredients: serves 4

400g tin chickpeas in water

olive oil

Method

Preheat oven to 180 degrees fan/ 200 C.

Really simply drain the chickpeas and dry them on some kitchen towel.

Place the chickpeas on a baking tray so they are in just one layer and drizzle over some olive oil.  Mix then about a bit until evenly coated.

Roast in the oven for around 30 minutes until golden brown, shaking them halfway through to ensure they crisp evenly.
