Sausage and Apple Casserole

Some of you may have seen the Mo Farah advert on TV in which he is eating a Quorn sausage casserole with his family.  Well this is my meat version of this dish which I served with cauliflower mash to help absorb all the yummy sauce.

This dish was a hit with adults and children alike.

Ingredients: serves 5

10 sausages (I always use the best quality ones I can find)

20g butter

250g shallots, peeled and chopped into half

2 cloves garlic, crushed

2 tbsp. tomato puree

3 tbsp. Worcestershire sauce

150ml clear apple juice

350ml beef stock

4 bay leaves

1 sprig thyme, leaves only

2 red / pink apples, cored and sliced thinly horizontally (skin can be left on or removed whatever you prefer)

8g sachet arrowroot mixed with 3 tbsp. water

1 whole cauliflower, cut into florets

Milk & butter to mash as desired

Method

Start by putting the sausages under the grill leaving them to cook but turning 3 times so browned evenly all over.

Meanwhile heat the butter in a large pan and fry the shallots for about 5 minutes until browned on the outside.  Stir regularly.

Next add the garlic and fry for a further minute.

Then add the tomato puree, Worcestershire sauce, apple juice, stock, bay leaves and thyme leaves and bring to the boil.  Then reduce heat and simmer uncovered for about 5 minutes.

During this time bring a pan of water to the boil and cook the cauliflower until soft (about 10 minutes).

Next add the apple to the sauce and cook for a further 5 minutes before adding the arrowroot mixture.

Season to taste and add the sausages mixing thoroughly.  Cook through for a few minutes to ensure the sausages are coated in the sauce.

While sausages are cooking through drain the cauliflower and mash with a little butter and milk.

Serve together immediately.
