Slow cookers should be a staple in any busy Mums life…. they make the process of creating healthy meals for all the family so much quicker and easier.
Another benefit is that you can make a really large batch and this will then do as another meal or can be frozen for another time when you just don’t have the time or energy to cook.
This pork and bean chilli is a healthier alternative to normal chilli using pork mince instead of beef, plus I’ve added plenty of beans and vegetables in too. It doesn’t need to be served with a carb as it has beans and sweet potato in it so try serving with a large portion of green veg only for a super healthy meal.
Ingredients: serves 8
1kg pork mince
2 onions, finely chopped
2 red peppers, chopped into 1cm cubes
4 cloves garlic, sliced or crushed
1/2 butternut squash, peeled & cut into 2cm cubes
2 sweet potatoes, peeled & cut into 2cm cubes
2 tsp dried oregano
2 tsp cumin
2 tsp paprika (leave out if you don’t like very spicy food)
4 tsp chipotle paste
1 tin tomatoes
1 tin mixed beans in a spicy tomato sauce
1 tin black beans in water, drained
Break up pork mince in the bottom of the slow cooker then add all the vegetables. Mix thoroughly.
Next add the spices, seasoning, tinned tomatoes and the tin of mixed beans including it’s sauce. Mix thoroughly again and add the lid.
Cook on low for the entire day or on medium for 4-6 hours.
About an hour before serving drain the black beans and add to the cooker. At the same time give it all a good stir and taste for flavour. Add more chipotle paste or spices as per your own preferences.
Serve straight from the slow cooker!
