I got this idea of a combination from an American food blogger but as usual have taken it and made it my own. You don’t need to use spicy sausages but it did make it taste so good!
I have deliberately not listed the quantities for all the spices and oil as you can add what feels good to you- this is a very versatile dish.
Ingredients: serves 2
1 large sweet potato
2 cloves garlic, chopped
Handful of panko (or breadcrumbs)
4 large spicy sausages
2 large handfuls of kale, chopped
Preheat oven to 200 degrees / 180 degrees fan/ gas mark 4.
Wash and chop the sweet potato into chunks (you can leave the skin on) and spread on a baking tray. Sprinkle over some paprika, panko, the chopped garlic and a drizzle of olive oil. Then give it a mix and place it in the oven.
Preheat the grill then add the sausages.
Whilst these are cooking wash and core the apples and chop into chunks (again leave the skin on). Place onto another baking tray and sprinkle over some cinnamon and coconut oil and mix.
Once the sweet potato has been cooking for 15 minutes place the apple into the oven, give the sweet potato a stir and turn the sausages over to ensure they cook evenly.
After a further 10 minutes add the chopped kale to the apple tray and cook for a further 5 minutes.
After 30 minutes total cooking time everything should be ready at the same time! Simply mix together in a dish and serve.
