My Husband and Son absolutely love sausages so I decided to work on a really tasty recipe that also has lots of greens with it too!
The tangy sticky sauce with the garlicky greens make a perfect taste combination and this meal really does feel like a treat.
I put quantities for honey in the recipe but I also mention a honey stevia mix. This is available in most supermarkets and means you only use half the quantity. Therefore using this mix means you only use 1 tbsp per person which is only 48 calories!
Ingredients: serves 2
4 – 6 good quality sausages (depending on how hungry you are)
4 tbsp honey (or honey stevia mix you only need 2 tbsp)
1 tbsp tamari (or you can use soy sauce)
1 tbsp olive oil (for the sauce)
3 large red onions cut into chunks
1 tbsp olive oil (for cooking)
1 pack (approx 250g) chopped spring greens
3 cloves garlic, crushed
Preheat the oven to 220 C / 200 fan.
Separate the sausages and lay in a deep sided baking tray.
Mix together the sauce ingredients – honey, tamari / soy sauce and olive oil. Spoon over each sausage.
Then scatter the red onion chunks around the sausages in the baking tray.
Place in the oven for 30 minutes, turning sausages and mixing onions around half way through.
5 minutes from the end, put the rest of the olive oil into a wok and heat. Then add the greens and garlic and fry on high heat for 5 minutes. Season.
Serve spring greens with sausages and sticky sauce mixture on top. Delicious!
