Sugar- Free Rocky Roads

I wouldn’t normally put a recipe from someone else on my site but whenever I make these Rocky Roads people just love them and I’m asked for the recipe time and time again.  I always use them whenever I give a talk about giving up sugar as you wouldn’t know they were sugar -free from tasting them and the only sweetness comes from dates.  The recipe comes from

Ingredients: makes about 16

60g hazelnuts

60g pistachios

100g pecans

120g mejool dates, stones removed

200g coconut oil, melted

2 tbsp. almond milk

45g raw cacao powder

50g dried cranberries (ideally unsweetened)


Toast all the nuts in a frying pan for about 4 minutes mixing regularly to prevent burning.  Then leave to cool.

Blend the dates, melted coconut oil, milk and cacao powder together in a blender.  It doesn’t have to be completely smooth, just remove the big lumps of dates.

Mix the blended chocolate sauce with the cooled nuts and then add the cranberries.

Line and grease a casserole dish and add the mixture.  Place in the fridge for about 2 hours until set.  Finally remove and slice into bars.

N.B. If you are making these in the warm months beware that coconut oil has a low melting point so these melt pretty quickly!
